Coconut Butter

Chances are you've never had the opportunity to taste this wonderful stuff...  Seriously, you don't know what you are missing. 

I start with a bag of unsweetened coconut.  This can either be flakes as you see here, or shredded, doesn't really matter.  I happen to prefer organic coconut, but this will work just as well with non-organic coconut.  The bag here is 10 oz and it almost fills my 64 oz VitamMix container.

Instructions here are about as simple as things get... open the bag and dump into a high powered blender.

I vastly prefer my VitaMix which I picked up through BlenderLady.com.  

You might have pretty good luck with a Ninja or equivalent, though the VitaMix makes this project a breeze.

 

 

Using the VitaMix tamper to help things along, I moved the variable speed of the VitaMix to 10 pretty darned quickly then hit the switch and jumped to High.  Continuously tamp for two minutes to create a perfectly wonderful coconut butter!  Yup, it's that simple.

Taste your coconut butter at this point and see what you think.  It's awesome just as it is.  

I also make a slightly sweetened version by adding just a bit of agave nectar (or your sweetener of choice) and a pinch (about 1/2 tsp) of sea salt.  You decided precisely how you want this to taste for yourself.

 

Start with straight coconut though, it's awesome on its own!

 

Transfer to an airtight container and store in the fridge.  Serve with banana, apple chips, spread on toast, eat it off a spoon.
